I adapted this recipe from Chefsline's Flourless Banana Cake
Ingredients:
7 eggs separated
1 cup sugar
1 cup Potato Starch
5-6 mashed red bananas (can use 2-3 regular bananas)
chopped roasted pistachio nuts
powdered cocoa
Recipe:
In a large bowl combine egg yolks and sugar. Mix with an electric mixer on high speed until thick and yellow in color. Add potato starch a little at a time, mixing to a smooth consistency. Approximately 5 minutes on medium speed. Add mashed bananas continue mixing for 1 minute. Beat egg whites until stiff. Gently fold egg whites into batter. Pour batter into cupcake liners in a cupcake pan about 3/4 full. Bake at 325 degrees for approximately 20-30 minutes or until cake springs back when touched. Top with pistachios and a dusting of cocoa.makes about 24 cupcakes.
